ABSTRACT OF THE DISCLOSURE Adjustable optical biprobe for measurement in a flow of any direction in a diaphasic emulsion and comprising two optical observation fibers (10, 12) mounted in a cylindrical support (4) blocking off the extremity of a hollow cylindrical tube (2) for penetrating into the emulsion and rotating around its longitudinal axis (XY), wherein the cylindrical support (4) is mounted rotating around a transverse axis (18) linked to the hollow cylinder (2) and perpendicular to the longitudinal axis (XY) of the latter and wherein a rod assembly (20), linked to the cylindrical support (4) and traversing the hollow cylindrical tube (2) by a joint (22), makes it possible from the inlet of the tube to control the state of rotation of the cylindrical support (4) around the transverse axis (18).
