An aerated confection containing high levels of fruit solids and method for making the same is disclosed. The method allows the incorporation of fruit solids at a level of from 0.5 to 20.0% by weight on a dry weight basis making the aerated confection similar to that of most real fruits. The aerated confection includes hexametaphosphate as a gel-stiffening agent.

Cette invention concerne une confiserie aérée à forte teneur en morceaux de fruits et méthode de fabrication. Cette méthode permet d'incorporer des morceaux de fruit à raison de 0,5 à 20,0 % du poids à sec, ce qui rend cette confiserie semblable à une confiserie faite le plus souvent de vrais fruits. La confiserie aérée renferme de préférence un hexamétaphosphate comme agent raidisseur de gelée.
