ABSTRACT The present invention relates to aerated edible fat-continuous compositions in which at least 50 % by weight of the continuous fat- phase consists of a blend of one or more polyol fatty acid polyesters. The invention provides compositions having improved aeratablity over conventional fat-based compositions and is particularly applicable to aerated solid confectionery products.
