Abstract of the Disclosure The invention relates to on aqueous papain solution which contains 20 to 60 % by weight of sucrose and 1.5 to 3 % by weight of sodium metabisulphite in addition to 1 to 35 % by weight of papain which solution may be used for preventing cold turbidity in beer, and which has an improved storage stability.
