An air treatment system and method for catering machine which includes an oil cooking device are disclosed. The treatment system has a system air inlet (70) through which ambient air is supplied to a cooking device (6) which has an air inlet (73) for removal of cooking process air and water vapour from the cooking device. A grease filter (76), for removing particles of grease and water droplets entrained in the process air removed from the cooking device, has an inlet connected to the cooking process air inlet and an outlet. A heat exchanger/condenser (79), for cooling process air and condensing water vapour, has a cooking process air inlet connected to the grease filter outlet, a cooking process air outlet (83), and a condensate outlet (80). A condensate reservoir (81) is connected to the condensate outlet. A filter assembly (85), for treating and reducing or removing odours from the cooking process air, has an inlet connected to the cooking process air outlet of the heat exchanger/condenser and an outlet. A process air fan (75) moves process air through the system and has an inlet connected to the outlet of the filter assembly and an outlet from which process air is removed from the system through a system air outlet (94).
L'invention se rapporte à un système et à un procédé de traitement de l'air destinés à une machine utilisée en restauration comportant un appareil de friture. Ce système de traitement comporte un orifice d'entrée d'air (70) par lequel l'air ambiant est amené à un appareil de cuisson (6) pourvu d'un orifice d'entrée d'air (73) destiné à évacuer l'air et la vapeur d'eau s'échappant dudit appareil. Un filtre à graisses (76), destiné à évacuer les particules de graisse et les gouttelettes d'eau entraînées dans l'air évacué, cet air provenant de l'appareil de cuisson, comporte un orifice d'entrée connecté aux orifices d'entrée et de sortie d'air dudit appareil. Un système d'échange/condensation (79) de chaleur, destiné à refroidir l'air s'échappant de l'appareil de cuisson et à condenser la vapeur d'eau, est pourvu d'un orifice d'entrée d'air dégagé pendant la cuisson connecté à la sortie du filtre à graisses, un orifice de sortie (83) de l'air dégagé pendant la cuisson, et un orifice d'évacuation (80) de l'eau de condensation. Un réservoir d'eau de condensation (81) est connecté à l'orifice d'évacuation de l'eau de condensation. Un système filtrant (85), destiné à traiter, réduire ou éliminer les odeurs de l'air provenant de l'appareil de cuisson, comporte un orifice d'entrée connecté à l'orifice d'évacuation de l'air dégagé pendant la cuisson du système d'échange/condensation de chaleur, ainsi qu'un orifice de sortie. Un ventilateur (75) de l'air de cuisson déplace cet air à travers le système et comporte une entrée connectée à l'orifice de sortie du système filtrant, et une sortie à partir de laquelle l'air est extrait du système grâce à un orifice d'évacuation (94) de l'air.
