The invention relates to an aleurone product comprising particles originating from the aleurone cells of cereal, in particular the aleurone cells of wheat. The invention is characterised in that the particles originating from the cereal aleurone cells are finely ground with a diameter of up to 500 µm as the longest dimension. The inventive aleurone product is produced as follows: preparation of bran, in particular wheat bran, which consists of aleurone constituents and non-aleurone constituents; separation of the aleurone constituents from the non-aleurone constituents to obtain a blend of aleurone constituents and non-aleurone constituents; adjustment of the humidity of the blend to achieve a value of 10-20 wt % water; and fine grinding (micro- grinding) of the blend by means of a friction roller mill comprising at least one roller pair, whose rollers are operated with different surface speeds and are pressed against one another.

L'invention concerne un produit aleurone, qui comporte des particules issues de cellules aleurones de céréales, notamment de blé. L'invention est caractérisée en ce que ces particules issues de cellules aleurones de céréales sont des particules finement broyées dont la dimension la plus grande se trouve au niveau du diamètre qui peut mesurer jusqu'à 500 ?m. La réalisation de ce produit aleurone comprend les opérations suivantes : préparer du son, notamment du son de blé composé de particules aleurones et de particules non aleurones; séparer les particules aleurones des particules non aleurones, de façon à obtenir un mélange composé de particules aleurones et de particules non aleurones; régler l'humidité du mélange à une valeur de 10-20 % en poids d'eau; broyer finement (microbroyage) le mélange au moyen d'un broyeur à rouleaux équipé d'au moins deux rouleaux entraînés à des vitesses superficielles différentes et pressés l'un contre l'autre.
