A process for producing an aged beverage, preferably a distilled spirit that is aged in contact with wood, in which raw or partially aged beverage is processed in a closed system with controlled heat and oxygen levels, and in contact with a beverage aging wood product. In certain embodiments ethyl acetate is added to the raw beverage prior to the aging process.

L'invention concerne un procédé de production d'une boisson vieillie, de préférence d'une boisson spiritueuse distillée vieillie en contact du bois. Selon ce procédé, on traite une boisson partiellement vieillie ou à l'état brut dans un système fermé pourvu de niveaux d'oxygène et de chaleur régulés, et en la mettant en contact avec un produit du bois de vieillissement de boissons. Dans certains modes de réalisation, de l'acétate d'éthyle est ajouté à la boisson à l'état brut avant que soit entamé le processus de vieillissement.
