Abstract An .alpha.-amylase inhibitor which is a polysaccharide having a molecular weightof approximately 1,200 is obtained from soy-bean by gel filtration method. The .alpha.- amylase inhibitor is produced by method comprising the step of removing proteins in soy-bean with ammonium sulfate or the like and then removing substances with a molecular weight of between 4,000 and 1,000.
