A process for the production of a starch product, and the starch product made by that process, containing at least about 15% resistant starch from a high amylose starch, such as HYLON V*or HYLON VII* consists essentially of the steps of gelatinizing a starch slurry, enzymatically debranching the starch, and isolating the starch product by extrusion, drying, or crystallization with salt. This resistant starch product is characterized by a specific melting endotherm over a temperature range of 95-140°C with a peak in the range of about 115°-135°C. * trade-mark

Un procédé pour la production d'un produit à base d'amidon et le produit à base d'amidon obtenu à l'aide de ce procédé, contenant au moins environ 15 % d'amidon résistant à l'amylase provenant d'un amidon riche en amylose, comme le HYLON V* ou le HYLON VII*; le procédé comporte essentiellement les étapes suivantes : gélification d'une suspension d'amidon, destruction des ramifications de l'amidon par des méthodes enzymatiques et isolement du produit à base d'amidon par extrusion, séchage ou cristallisation avec un sel.
