An apparatus for heating and controlling the process temperature in a tunnel pasteurizer, in particular for packaged food products, in which the tunnel, provided with a conveyor able to advance the product, is substantially subdivided into a first pre-heating area, into a second pasteurization heat treatment area and a third area where the product is cooled. The apparatus is provided at least with a heat exchanger comprising a primary loop and a plurality of secondary loops, each of which is connected to the hydraulic loop of each sub-area. Each secondary loop is further provided with servo-controlled modulating valves which serve as means for controlling the temperature of the water of the sprinkler of each sub-area.

Un appareil pour chauffer et contrôler la température d'opération dans un tunnel de pasteurisation, en particulier pour les produits alimentaires emballés, dans lequel le tunnel, muni d'un convoyeur en mesure de faire avancer le produit, est essentiellement subdivisé en une première zone de pré-chauffage, en une deuxième zone de traitement de pasteurisation thermique et une troisième zone dans laquelle le produit est refroidi. L'appareil est muni d'au moins un échangeur de chaleur comprenant une boucle primaire et une pluralité de boucles secondaires, dont chacune est reliée à la boucle hydraulique de chaque sous-zone. Chaque boucle secondaire est en outre pourvue de vannes modulatrices servocontrôlées qui servent de moyens pour contrôler la température de l'eau de l'arroseur dans chaque sous-zone.
