An apparatus for manufacturing of Ethiopian circular, thin, flat breads widely known among Ethiopians and some neighbouring countries as Injera or Enjera. The apparatus comprising injera batter reservoir, batter deposition apparatus with integrated batter spreading apparatus, baking section, cooling section, picking apparatus and packing/distribution section. The batter reservoir comprises a tank with meshes that filter out any unwanted suspended materials in the injera batter. The batter deposition apparatus comprises well-configured pipes that deposit batter in a hot non-sticky baking surface and the batter depositor has an integrated batter spreader to spread the batter to uniform thickness. The baking section comprises hot heating wires that heat the non-sticky baking surface with a batter on it to a desirable temperature. The cooling section comprises a cold air supply and a hot steam suction to cool the injera pieces to a desired temperature. The picking apparatus comprises two sets of rollers that coat with non-sticky coat and rotate in opposite directions, and finally injera is ready to be packed and distributed from the packing conveyor belt.
