An ice-cream confectionery product in the form of an emulsion stable in the liquid state at ambient temperature, preservable at ambient temperature in the said liquid state when packaged in sterile conditions and having a microcrystalline structure upon freezing in the absence of beating, comprising alimentary fats, milk proteins, sweeteners, flavourings and water, characterised in that it further comprises a thickening and stabilising composition comprising a salt acting as a protein stabiliser, a hydrocolloid constituted by a chemically modified starch and at least one further hydrocolloid chosen from water soluble hemicellulose, pectins having a high degree of esterification and mixtures thereof.

L'invention consiste en un produit de confiserie de crème glacée sous forme d'émulsion stable à l'état liquide et à la température de la pièce, qui peut être préservée à la température de la pièce et dans son état liquide lorsqu'elle est conservée sous emballage stérile. Lorsque le produit est congelé et qu'il n'a pas été battu, sa structure microcrystalline est constituée de lipides, de protéines de lait, d'édulcorants, d'aromes et d'eau. € cette structure s'ajoutent un agent d'épaississement et de stabilisation, qui comprend du sel à titre de stabilisateur de protéines, un hydrocolloïde constitué d'amidon chimiquement modifié, au moins un autre hydrocolloïde provenant d'une hémicellulose hydrosoluble, des pectines présentant un degré élevé d'estérification, ainsi qu'un mélange correspondant.
