A process for modifying the taste and/or odour properties of a food colouring substance having unpleasant taste and/or odour properties is disclosed. Secondly, there is provided a process for obtaining a blue non-bleeding colour that seems approvable by most health authorities. The invention is useful in food products, sweets and pharmaceutical products in- gested orally.

En outre, cette invention porte sur un procédé permettant d'obtenir un colorant bleu non soluble pouvant être approuvé par la plupart des autorités en matière de santé. L'objet de cette invention peut être utilisé dans des produits alimentaires, des confiseries ainsi que dans des produits pharmaceutiques ingérés par voie orale. Cette substance de coloration alimentaire est un dérivé anthocyanine représenté par la formule (I).
