ABSTRACT A new class of natural antioxidants consists of extracts of plant matter containing hydrolysable gallo- tannins. These gallotannins may be in the form of a crude extract which is obtained by extracting the plant matter with a water-miscible solvent, evaporating the solvent under vacuum and drying it. The crude extract may be purified by taking it up in a mixture of organic solvent and water, separating the organic phase, evaporating the solvent under vacuum and drying the residue to obtain mainly tannic acid. The purified extract may then be hydrolysed in a mixture of methanol and water at a pH of from 6 to 8, the hydrolysate extracted by an organic solvent, the solvent evaporated under vacuum and the residue which contains mainly pentagalloyl glucose may be dried. The plant extracts have good anti-oxidant properties, while being neutral from the point of view of colour, taste and smell, this not being the case with the extracts of spices.
