A water-soluble, generally-crystalline, mono- and/or dicalcium fumarate is included at a low level (less than 2% by weight) in a dry food mix, such as a powdered beverage mix. The calcium fumarate will have an average particle size of 35 microns or less and can function as an anticaking or flow agent. The per serving use level will be below that suitable for calcium fortification and is typically less than 50 mg per serving which is a mere 5% of the U.S. Percent Daily Value for calcium of 1,000 mg.

Du fumarate mono- et/ou dicalcique hydrosoluble, généralement cristallin, est ajouté à faible concentration (moins de 2 % en poids) dans une denrée alimentaire sèche, comme un mélange à boisson en poudre. La taille moyenne des particules de fumarate de calcium est de 35 micromètres ou moins et ce dernier peut agir comme agent anti-agglomérant.
