An antimicrobial composition comprising an antimicrobial material derived from the plant family Allium together with non-pathogenic microorganisms of at least one species, in which the antimicrobial material is isolated from the plant material in such a way (for example, by freeze-drying of whole cloves) that the material comprises alliin and alliinase and is substantially free of allicin. The composition is useful for combatting pathogenic microorganisms in animal gastrointestinal tract or for treat- ment of silage.
