Methods of obtaining and using an extract of lentil seed coats that are enriched in polyphenolic species are presented. The extract exhibits antioxidant activities against free radicals, including superoxide. The extract can be used to stabilize and protect food, animal feeds and dietary supplements against oxidizing agents. The extract can decrease the risk of conditions associated with free radical and oxidant stress and can limit the activity of proinflammatory cells.
L'invention porte sur des procédés visant à obtenir et à utiliser un extrait de téguments de lentilles enrichi en espèces polyphénoliques. L'extrait présente des activités antioxydantes contre les radicaux libres telles que celle du superoxyde.
