Aqueous compositions formed from combining water, and at least one solute such as sodium bicarbonate, acetylsalicylic acid or mixtures thereof, and methods of using the compositions to introduce and maintain humidity in the atmosphere. The aqueous compositions can be used to prolong the shelf life of foods, including vegetables, fruits, meats, fish, seafood, cheeses, other diary products, cookies, breads, cakes, brown sugar, and tortillas, and cut flowers. The aqueous compositions can be applied directly to the food or can be applied to evaporation devices. The evaporation devices have a shell with holes formed therethrough and an absorbent material encased in the shell. When the aqueous composition has been applied to the evaporation device, the device is placed in a space that contains the food to be preserved. The evaporation device can be recharged by reapplying the aqueous composition as needed.

L'invention concerne des compositions aqueuses constituées par la combinaison de l'eau et d'au moins un soluté tel que le bicarbonate de sodium, l'acide acétylsalicylique ou leurs mélanges, ainsi que des procédés d'utilisation desdites compositions permettant d'apporter et de conserver l'humidité dans l'atmosphère. Les compositions aqueuses peuvent servir à prolonger la durée de conservation de produits alimentaires, y compris légumes, fruits, viandes, poissons, fruits de mer, fromages et autres produits laitiers, biscuits, pains, gâteaux, sucre brun et tortillas, ainsi que des fleurs coupées. Les compositions aqueuses peuvent être appliquées directement aux produits alimentaires ainsi qu'aux dispositifs d'évaporation. Lesdits dispositifs sont constitués d'une coquille percée de trous et contenant un matériau absorbant. Une fois la composition aqueuse appliquée au dispositif d'évaporation, on place ce dernier dans un espace contenant les aliments à conserver. Le dispositif d'évaporation peut être rechargé par une nouvelle application de la solution aqueuse, s'il y a lieu.
