The present invention comprises an improved extruder die assembly (800) and method for using same to improve the quality of dimensional design aspects of extruded, complexly shaped, direct expanded food products. The improved system includes an improved die assembly (800) comprising a first die (810) and a second die (860) having at least one orifice. A majority of the total pressure drop occurs in the first die (810) to pre-expand the dough prior to the dough entering the second die (860). The orifices in the first die (810) can be individually configured to obtain differing dough flow speeds resulting in a desired flow pattern. A plurality of extruded dough ropes formed at each orifice exit of the first die (810) can meld together in the bore and exit the second die. Color or flavor can be added at the first die (810) to enhance the food product.
L'invention concerne un ensemble filière d'extrusion amélioré et un procédé d'utilisation correspondant permettant d'améliorer la qualité de conception dimensionnelle de produits alimentaires à expansion directe ayant des formes complexes. Le système amélioré comprend un ensemble filière amélioré à première filière et seconde filière ayant au moins un orifice. La plus grande partie de la chute de pression totale intervient dans la première filière pour la préexpansion de la pâte avant l'entrée de celle-ci dans la seconde filière. Les orifices de la première filière peuvent avoir une configuration individuelle donnant diverses vitesses d'écoulement de pâte qui se traduisent par un type d'écoulement spécifique.
