An apparatus and process for producing reduced and low-fat, high-quality pasta filata cheese incorportaes a rice-based cheese substitute into freshly manufactured past filata cheese through a kneading, spraying process that preserves the integrity of the cheese's fiber structure. The rice based cheese substitute may be manufactured on-site with a heated double walled vessel equipped with a high shear mixer and recirculating shear pump.

Dispositif et procédé servant à fabriquer des fromages caillés élastiques, de type pasta filata italiens, de qualité élevée et possédant une faible teneur en graisses, ce qui consiste à incorporer un substitut de fromage à base de riz dans le fromage caillé frais au moyen d'une opération de pétrissage et de pulvérisation préservant l'intégrité de la structure de la fibre du fromage. On peut fabriquer ce substitut de fromage à base de riz sur place dans une cuve réchauffée à double paroi équipée d'un mélangeur à cisaillement puissant et d'une pompe de recirculation à cisaillement.
