An apparatus, a method and a flat (e.g. 2a) for pasteurizing a plurality of layers of in-shell eggs without substantially impairing the functionality of the in- shell eggs. The apparatus includes a fluid bath (120), heat exchangers (52, 53, 54, 55a, and 55), a means for vertically pertubating the entire surface of in-shell eggs loosely held in a plurality of flats (21b and 29a) forming at least one stack thereof (10, 20).
