Description

This invention relates to a heat-sterilizing unit (10), which is used in the food processing industry for the sterilization of knives and steels (14 and 16). The apparatus includes a water bath (20) filled with water which is maintained at a temperature of at least that required to kill most problem micro-organisms and a rack (12) for supporting one or more work tools and a rack raising and lowering means. When the rack with the tools inserted therein are in a lowered position, supported work tools on the rack are fully submerged in the water. In a raised position, the handles of supported work tools on the rack are raised above the level of the water. The water bath (20) further comprises an overflow outlet (27) located so that the water level in the water bath is determined by the location of the outlet primarily to allow for the overflow of accumulated waste from the work tools.
