Apparatus with a chamber (1) serving for a heat treatment of a particular food product (11), which for example can be pre-processed potato pieces which are to be prepared as French fried potatoes, and therefore have a content of evaporable substances, such as fat. In the chamber (1) is a grid (10) for, during operation, carrying the product, and one or more quartz lamps (23) for generating heat for the process. The chamber (1) is furthermore fitted with an air shaft (34) which via a filter device connects the chamber (1) to the open. Above the grid (10) is placed a cabinet (20) which is open at the bottom, for mounting the quartz lamps (23). The cabinet (20) is via an inlet duct (26) connected to the open. In the inlet duct (26) is placed a ventilator (28) for sending an air current into the cabinet (20) via the inlet duct (26). The air acts as a shield which keeps for example fat vapours at a distance so that they cannot come into contact with the quartz lamps (23) and disintegrate in the high temperature of these. Thereby, it is prevented that unhealthy and malodorous substances are produced during the process. The air shield furthermore cools the quartz lamps (23) which thereby will attain a long life.
L'invention concerne un appareil doté d'une chambre (1) destinée au traitement thermique d'une denrée alimentaire (11) spécifique contenant un certain pourcentage de substances évaporables, telles que la graisse, par exemple, des morceaux de pommes de terre pré-traités à préparer en frites. Dans la chambre (1), une grille (10) supporte la denrée alimentaire durant l'opération et au moins une lampe à quartz (23) génère la chaleur nécessaire au procédé. La chambre (1) est également équipée d'un puits d'air (34) qui relie la chambre (1) à l'extérieur via un dispositif filtrant. Au-dessus de la grille (10), un coffret (20) ouvert à la base est destiné à recevoir les lampes à quartz (23). L'écran d'air permet également le refroidissement des lampes à quartz (23) dont la durée de vie est ainsi prolongée.
