ABSTRACT OF THE DISCLOSURE The apparatus comprises a cutting tool which is used to act on the pastry and is mounted on a mobile assembly comprising a planet wheel which rotates around a statio- nary part in planetary manner and carrying the tool. The tool is capable of being driven, on the one hand by a ro- tational movement, to act on the pastry at regular inter- vals after the completion of a given tracing, thus produ- cing on the pastry one or more repetitive tracings which are identical, but are regularly displaced with respect to one another. The cutting tool is mounted so that it only scores a part of the thickness of the pastry and ensures a correct ri- sing thereof during baking.
