A food patty-forming apparatus for forming food patties from pressurized food product includes a mold plate that is guided to reciprocate longitudinally between a fill position and a discharge position. The mold plate has a cavity that is open to the source of pressurized food product when in the fill position. The cavity is exposed when in the discharge position. A mold pattern having open areas and solid areas is arranged adjacent a first face of the cavity, and indented from a second face. A knockout plunger has open areas corresponding to the solid areas of the pattern and solid areas corresponding to the open areas of the mold pattern. The knockout plunger is shaped to allow the solid areas of the plunger to penetrate into the cavity past the first face of the cavity around the solid areas to displace a patty formed in the cavity.
La présente invention concerne un dispositif pour former des portions d'aliments à partir d'aliments sous pression, le dispositif comprenant une plaque de moule qui est guidée pour effectuer un mouvement longitudinal alternatif entre une position de remplissage et une position de vidage. La plaque de moule comprend une cavité qui est ouverte vers la source d'aliments sous pression dans la position de remplissage. La cavité est exposée en position de vidage. Un motif de moule présentant des zones ouvertes et des zones solides, est disposé de façon adjacente à une première face de la cavité, et renfoncée par rapport à une seconde face. Un piston éjecteur présente des zones ouvertes qui correspondent aux zones solides du motif, et des zones solides qui correspondent aux zones ouvertes du motif de moule. Le piston éjecteur a une forme qui permet aux zones solides du piston de pénétrer dans la cavité en dépassant la première face de la cavité, autour des zones solides, afin de déplacer une portion formée dans la cavité.
