An apparatus for forming bread rolls from unbaked dough comprising at least one plate, a moveable conveyor surface and a lock for securing the plate in a fixed position above the conveyor surface. The plate has a longitudinally extending contact surface which, together with the conveyor surface, defines a passage for the unbaked dough as it passes through the apparatus. The contact surface has a transverse profile whereby the central portion of the contact surface is at a greater height above the conveyor surface than the side portions of the contact surface. The height of the central portion above the contact surface decreases from the front end of the plate where the dough enters the apparatus to the rear end of the plate where the dough exits the apparatus.
