The invention provides an apparatus (10) for scaling and molding dough (13) which comprises a hopper (12) for the dough (13) and a scaling and molding station (20) which is in flow communication with the hopper (12) so that a portion of the dough (13) can be moved from the hopper (12) to the scaling and molding station (20). The scaling and molding station (20) has at least one aperture forming assembly (25) at its exit (22) which operates to mold the dough portion (14) by rolling it along its internal walls and to pinch off and eject a dough piece (14) from the apparatus (10). Preferably, the scaling and molding station (20) has a plurality of stacked aperture forming assemblies (25) which function sequentially. The apparatus (10) may be configured to produce several molded dough pieces (14) simultaneously.
L'invention concerne un dispositif (10) pour la division et le façonnage de pâte (13), qui comprend une trémie (12) à pâte (13) et un poste de division et de façonnage (20) communiquant avec la trémie (12), si bien qu'un morceau de pâte (13) peut être transféré de la trémie (12) au poste de division et de façonnage (20). Ledit poste (20) a en sortie (22) au moins un ensemble (25) formant ouverture, qui fonctionne de manière à façonner la portion (14) de pâte en la roulant sur ses parois internes, puis à détacher et à éjecter la portion (14) de pâte du dispositif (10). De préférence, le poste de division et de façonnage (20) a une pluralité d'ensembles (25) empilés formant ouverture qui fonctionnent en séquences. On peut donner au dispositif (10) une configuration propre au façonnage simultané de plusieurs portions (14) de pâte moulées.
