ABSTRACT Apparatus for the production of a coherent meat product from pieces of deboned meat, including meat derived from birds, fish, crustaceans and molluscs. The apparatus includes meat tenderising means adapted to form in the meat pieces, cuts, scores or tears and conveying means to convey the tenderised meat pieces to meat reforming means. The meat reforming means comprise a hopper to receive the tenderised meat pieces, a tubular member extending outwardly from the base of the hopper, a helical conveyor disposed within the tube and adapted to convey meat pieces into a container slidably disposed on the tube. The conveyor carries at its free end a comb adapted to engage with meat pieces being conveyed through the tube and to press them uniformly into the container.
