A portable apparatus for assessing meat quality, comprises: a hand-held instrument comprising a main body having at one end a hollow meat probe for penetrating meat, an optic fibre extending through the main body and terminating at a window at the distal end of the probe. The main body has a probe position sensing device for sensing position as the probe enters and exits the meat. A carrier pack is adapted for mounting on an operator. The pack comprises a fluorimetry unit having a source of ultraviolet radiation, a power source and a microcontroller/processing unit. A user interactive communications device is on the main body and a cable interconnects the main body and the carrier pack. The cable transmits electronic data between the interactive communication device and the microcontroller/processor unit and ultraviolet radiation output and fluorescent light input between the probe window and the fluorimetry unit.
L'invention concerne un appareil portatif destiné à évaluer une qualité de viande, qui comprend un instrument à main comprenant un corps principal doté à une extrémité d'une sonde à viande creuse destinée à pénétrer la viande, une fibre optique s'étendant à travers le corps principal et se terminant à une fenêtre située à l'extrémité distale de la sonde. Le corps principal est pourvu d'un dispositif de détection de position de sonde, pour détecter une position lorsque la sonde est introduite, et lorsqu'elle est extraite de la viande. Un ensemble porteur est adapté pour être monté sur un opérateur. Cet ensemble comprend une unité de fluorimétrie dotée d'une source de rayons ultraviolets, une source d'alimentation et une unité de microcommande/traitement. Un dispositif de communication interactif avec un utilisateur se trouve sur le corps principal et un câble relie le corps principal à l'ensemble porteur. Ce câble permet de transmettre des données électroniques entre le dispositif de communication interactif et l'unité de microcommande/traitement, ainsi que les rayons de sortie ultraviolets et une entrée de lumière fluorescente entre la fenêtre de la sonde et l'unité de fluorimétrie.
