Novel aspartyl dipeptide ester derivatives (including salts thereof) having an excellent sweetening effect and usable as sweeteners such as N-[N-[3-(3-methyl-4- hydroxyphenyl)propyl]-L-a-aspartyl]-L-phenylalanine 1- methyl ester and N-[N-[3-(3-hydroxy-4- methoxyphenyl)propyl]-L-a-aspartyl]-L-phenylalanine 1- methyl ester, and excellent sweeteners,etc. containing these novel derivatives are provided. A low-calory sweetener having especially an excellent sweetening potency can be provided in comparison with conventional ones.
L'invention concerne de nouveaux dérivés d'ester aspartyl dipeptidique (y compris ceux qui se présentent sous la forme d'un sel), ayant un excellent pouvoir édulcorant et utilisables comme agents édulcorants, tels que le N-[N-[3-(3-méthyl-4-hydroxyphényl)propyl]-L-.alpha.-aspartyl]-L-phénylalanine 1-méthyl ester et le N-[N-[3-(3-hydroxy-4-méthoxyphényl)propyl]-L-.alpha.-aspartyl]-L-phénylalanine 1-méthyl ester, ainsi que d'excellents agents édulcorants, etc. contenant ces nouveaux dérivés. L'invention permet ainsi d'obtenir des édulcorants hypocaloriques qui sont supérieurs, notamment au point de vue pouvoir édulcorant, aux édulcorants conventionnels.
