La présente invention concerne un polypeptide possédant une activité enzymatique de beta -glucosidase, un polynucléotide codant le polypeptide, un produit de synthèse d'acide nucléique portant le polynucléotide, des cellules transformées ou infectées telles que des cellules de levures, et des organismes transgéniques exprimant le polynucléotide précité. L'invention se rapporte aux diverses utilisations du polypeptide, du polynucléotide, des cellules et/ou organismes précités, y compris à la production d'un polypeptide recombiné possédant l'activité enzymatique du beta -glucosidase, à l'augmentation du niveau des composés aromatiques dans les boissons alcoolisées et autres produits de la fermentation de matières végétales, à l'hydrolyse du cellobiose et, par conséquent, à l'augmentation du niveau de glucose fermentable, à l'augmentation de la production d'alcool comme l'alcool éthylique à partir de matières végétales, à l'augmentation des arômes émanant d'une plante ou d'un produit végétal, et à l'hydrolyse ou la transglucosylation des glycosides.
