ABSTRACT OF THE DISCLOSURE Free fatty acid, either per se or as liberated from the corresponding ester in a sample is advantageously assayed by a combination of the following processes: (1) converting the fatty acid to acyl-CoA; (2) converting the acyl-CoA to dehydroacyl-CoA; (3) converting the dehydroacyl-CoA into hydroxyacyl-CoA; (4) converting the hydroxyacyl-CoA into ketoacyl-CoA, and (5) converting the ketoacyl-CoA into acyl- CoA having an acyl group of two fewer carbon atoms than the fatty acid; and measuring the detectable changes.
