According to the invention, there is provided null-LOX-1 barley and plant products produced thereof, such as malt manufactured by using barley kernels defective in synthesis of the fatty acid-converting enzyme lipoxygenase-1. Said enzyme accounts for the principal activity related to conversion of linoleic acid into 9-hydroperoxy octadecadienoic acid, a lipoxygenase pathway metabolite, which-through further enzymatic or spontaneous reactions-may lead to the appearance of trans-2-nonenal. The invention enables brewers to produce a beer devoid of detectable trans-2-nonenal-specific off flavors, even after prolonged storage of the beverage.

La présente invention a trait à une orge exempte de LOX-1 et des produits végétaux obtenus de celle-ci, tels que le malt fabriqué au moyen de noyaux d'orge déficients en synthèse de l'enzyme lipoxygénase 1 de conversion d'acides gras. Ladite enzyme est responsable de l'activité principale associée à la conversion de l'acide linoléique en acide 9-hydroperoxy octadécadiénoïque, un métabolite de la voie de lipoxygénase, qui par des réactions additionnelles enzymatiques ou spontanées peut entraîner l'apparition de trans-2-nonénal. L'invention permet la production par des brasseurs d'une bière exempte de défauts d'arôme spécifiques au trans-2-nonénal, suite à un stockage prolongé de la boisson.
