ABSTRACT OF THE DISCLOSURE The invention relates to a metal complex of formula (I), wherein Mz+ is an alkaline earth metal ion and/or a transition metal ion with 3d orbital, z is the charge number of cation Mz+, M+ is an alkali metal ion, Ps- represents a monomeric unit of an acidic oligo- or poly- saccharide chain comprising one carboxylate group, Ps represents one neutral carbohydrate unit of an acidic oligo- or polysaccharide chain, a1 is the stoichiometric coefficient of the hydroxy ligands, a2 is the stoichiometric coefficient of the hydrocarbonate ligands, a3 is the stoichiometric coefficient of the carbonate ligands, x and y are the stoichiometric coefficients of the individual structural units of the saccharide chain, and n is the polymerization degree of the polysaccharide chain built up from the above structural units, with the proviso that any one of a1, a2 and a3 may be equal to zero but the sum of a1, a2 and a3 is always greater than zero, and the maximum value of the sum of a1, a2 and 2a3 is equal to z-1. The invention also relates to a pharmaceutical composi- tion, to a fruit or vegetable juice and to a fruit-containing gel comprising a compound of formula (I). Furthermore, the invention relates to a method for preparing a compound of formula (I).
