A process for obtaining .beta.-glucan from cereal by extracting with water and without deactivation of enzymes associated with the cereal. A process for controlling the average molecular weight of .beta.-glucan extracted from cereal by controlling the extraction time. A process for recovering .beta.- glucan from an aqueous solution of .beta.-glucan comprising freezing the solution, allowing the solution to thaw and separating solids from the resultant suspension. A .beta.-glucan produced by any of these processes. A .beta.-glucan which forms a gel when a heated solution of the .beta.-glucan cools. The use of .beta.-glucan in treating various health disorders, as an additive in cosmetics and foods, and as a film forming agent. A cereal from which .beta.-glucan has been extracted for use as animal feed or in brewing processes.

Ce procédé d'obtention de .beta.-glucane à partir d'une céréale consiste à extraire cette substance à l'aide d'eau, sans désactiver les enzymes associées à cette céréale. On décrit également un procédé de régulation de la masse moléculaire moyenne du .beta.-glucane extrait d'une céréale, par réglage du temps d'extraction. On décrit encore un procédé de récupération du .beta.-glucane à partir d'une solution aqueuse de .beta.-glucane, consistant à congeler cette solution, puis à la laisser se décongeler et à séparer les solides à partir de la suspension résultante. L'invention concerne également un .beta.-glucane produit à l'aide de l'un quelconque des procédés ci-dessus, un .beta.-glucane formant un gel lors du refroidissement d'une solution chauffée de .beta.-glucane, l'utilisation du .beta.-glucane dans le traitement de divers troubles de santé, en tant qu'additif dans des cosmétiques et des aliments, et en tant qu'agent de formation de film. L'invention concerne enfin une céréale de laquelle on a extrait le .beta.-glucane et que l'on utilise dans l'alimentation animale ou dans des procédés de brasserie.
