The present invention concerns a beverage containing proteins and/or peptides and is characterized in that it contains Cereal-LTP and or homologues as herein defined and/or a modified Cereal-LTP fraction obtainable from the Cereal-LTP and/or homologues by heating, boiling and/or mashing the Cereal-LTP and/or homologues in water at a pH between 3 and 7. The invention also concerns a method for preparing it and a use of a foam-forming additive.
La présente invention concerne une boisson contenant des protéines et/ou des peptides. Cette boisson se caractérise en ce qu'elle contient une protéine de transfert de lipide tirée de céréales et/ou des homologues de cette protéine tels que définis ici, et/ou une fraction modifiée de cette protéine de transfert de lipide tirée de céréales, que l'on obtient à partir de ladite protéine de transfert de lipide tirée de céréales et/ou d'homologues de celle-ci en faisant chauffer, en faisant bouillir et/ou écrasant celle-ci et/ou ceux-ci dans l'eau, à un pH situé entre 3 et 7. La présente invention a également pour objet un procédé pour préparer cette boisson et l'utilisation d'un additif assurant la formation de mousse.
