A B S T R A C T A process and apparatus for the manufacture of coffee extracts in liquid or solid form, which avoid the troublesome foam which often is produced. The process consists of holding liquid extract at low temperature to preci- pitate out waxes or like solid matter, feeding the liquid to a holding tank, holding the liquid from the centrifuge in quiescent state for at least two hours at between 32 to 100°F, forming ice in the liquid and separating ice from the liquid. The apparatus comprises means for separating liquid coffee extract from precipitated solids, means for thereafter feeding the liquid to holding tanks in which the liquid can be held in quiescent state for at least two hours, means for feeding the liquid to a crystallizer to from ice therein means for separating the ice from the concentrated liquid, and means for treating the concentrated liquid to form solid soluble coffee.
