This invention relates to a beverage thickener/emulsifier system which is a blend of three materials: propylene glycol alginate (a surface active thickener), xanthan (a pseudoplastic thickener) and guar gum (a Newtonian thickener). This system provides very stable oil-in-water emulsions in beverages and provides full bodied beverage texture even at acid pH. The system uses a low total gum level (below 0.4 % in a single strength beverage) yet provides a very stable oil emulsion without excessive thickness.

Système épaississant/émulsifiant pour boisson, consistant en un mélange de trois produits : alginate de propylèneglycol (épaississant surfactif), xanthame (épaississant pseudoplastique) et gomme guar (épaississant newtonien). Ce système donne des émulsions d'huile dans l'eau très stables dans les boissons, et permet d'obtenir des boissons à texture entière, même à pH acide. Le système utilise une faible teneur en gomme totale (moins de 0,4 % dans une boisson non concentrée), tout en produisant des émulsions huileuses stables, sans épaississement excessif.
