A process for making a powdered precursor for preparing an acidic beverage upon admixture of the powdered precursor with a liquid, the process comprising the steps: (a) preparing a first slurry comprising a protein source and a polysaccharide stabiliser, said first slurry having a neutral or an acidic pH; (b) adjusting the pH of the first slurry, if necessary, to a value in the range of from 5.5 to 7.5, preferably 6 to 7.5, more preferably from 6 to 7; and (c) spray drying the first slurry after step (a) or step (b).

La présente invention se rapporte à un procédé de préparation d'un précurseur pulvérulent permettant la préparation d'une boisson acide par mélange dudit précurseur pulvérulent avec un liquide, ledit procédé comprenant les étapes consistant à: (a) préparer une première suspension épaisse comportant une source de protéines et un agent stabilisant glucidique, ladite première suspension épaisse ayant un pH neutre ou acide; (b) ajuster le pH de la première suspension épaisse, si nécessaire, jusqu'à une valeur comprise entre 5,5 et 7,5, de préférence entre 6 et 7,5, et idéalement entre 6 et 7; et (c) sécher par pulvérisation la première suspension épaisse après l'étape (a) ou l'étape (b).
