A mixed sodium-potassium polyphosphate glass with a high potassium to sodium ratio and a low level of insoluble material and a method for its production are disclosed. The polyphosphate glass is used in reduced sodium foods, especially beverages and meat products. The polyphosphate has the formula (K,Na)(n+2)O(PO3)n, in which the ratio of potassium to sodium is about 0.5 to 3.8; the average value of n is greater than 10; and at least 85 % of the phosphate species comprise more than three phosphate units. The material contains less than 10% by weight insoluble material.
La présente invention concerne, d'une part un verre de polyphosphate de sodium-potassium présentant rapport potassium/sodium élevé avec une faible teneur en matière insoluble, et d'autre part le procédé de production correspondant. Ce verre au polyphosphate convient particulièrement pour les produits alimentaires à faible teneur en sodium, particulièrement les boissons et les produits carnés. La formule de ce polyphosphate est (K,Na)(n+2)O(PO3)n. Le rapport potassium/sodium est d'environ 0,5 à 3,8. Dans cette formule, la valeur moyenne de n est supérieure à 10, 85% au moins de l'espèce phosphate comprenant au moins quatre unités phosphate. La teneur en matières insolubles du matériau obtenu est inférieure à 10%.
