Heavy metals such as lead, copper, zinc and cadmium can be effectively extracted from mixtures such as sludge by treatment of the mixtures with carboxyl derivatives of fructans. The fructans, such as inulin, preferably have a degree of substitution of 0.2 - 3Ø In particular a carboxymethylinulin or a dicarboxyinulin containing 0.5 - 2.0 carboxyl groups per monosaccharide unit is used.
