A method for carrying out the treatment by extracting mannoproteins from yeast by enzymatic digestion, and the resulting mannoprotein, are also disclosed.

L'invention concerne un traitement d'un vin en vue de sa stabilisation vis-à-vis des sels tartriques et des protéines, caractérisé en ce qu'il consiste à ajouter au vin des mannoprotéines extraites des parois de levures par digestion enzymatique. L'invention concerne également un procédé d'extraction de mannoprotéines par digestion enzymatique de levures pour la mise en oeuvre du traitement objet de l'invention, ainsi que la mannoprotéine obtenue.
