Cookware having improved uniform heat transfer over the entire cross section thereof, the cookware formed from a multi-layered composite metal (20) having a layer (40) of titanium or other metal having a lower coefficient of thermal conductivity than that of the adjacent layers at or near the core of the composite. The titanium layer is roll bonded to layers (60), (60') of aluminum which, in turn, is roll bonded to layers (70), (70') of stainless steel. The layer of stainless steel adjacent to the cooking range may be a ferritic stainless steel if induction-type heating is desired. The multi-layered composite is also suitable for making a sole plate for an iron. Both the cookware and sole plate may include a non-stick surface (90) applied thereto.

L'invention concerne des ustensiles de cuisson à transfert thermique amélioré sur toute la section transversale, en métal composite multicouche (20) avec une couche (40) de titane ou autre métal ayant un moindre coefficient de conductivité thermique par rapport aux couches adjacentes, au coeur du composite ou près de celui-ci. La couche de titane est laminée sur les couches (60), (60') d'aluminium qui, elles-mêmes, sont laminées sur les couches (70), (70') d'acier inoxydable. La couche d'acier inoxydable adjacente au fourneau de cuisine peut être en acier ferritique inoxydable si l'on souhaite une activité thermique du type à induction. Le composite multicouche considéré se prête aussi à l'élaboration d'une plaque de semelle pour fer. On peut appliquer sur les ustensiles de cuisson et la plaque de semelle en question une surface non adhésive (90).
