The present invention relates to the identification of a single nucleotide polymorphism (SNP) within the bovine CAST locus encoding the calpastatin protein, wherein the allelic variation of the SNP is a G/C transversion associated with post-mortem muscle tenderness. The invention further relates to oligonucleotides useful in identifying the genotype of bovines as it relates to the CAST locus polymorphic site. The invention also encompasses computer~assisted methods and systems for improving the production efficiency for livestock having marketably tender meat using multiple data, and in particular the genotype of the animals as it relates to the CAST SNP. These methods of the invention encompass obtaining a genetic sample from each animal in a herd of livestock, determining the genotype of each animal with respect to specific quality traits as defined by a panel of at least two single polynucleotide polymorphisms (SNPs), one SNP corresponding to a site between exons 5 and 6 of the bovine CASTlocus, grouping animals with like genotypes, and optionally, further sub-grouping animals based on like phenotypes.
La présente invention se rapporte à l'identification d'un polymorphisme d'un nucléotide simple (SNP) à l'intérieur d'un locus CAST bovin codant pour la protéine de calpastatine, la variation allélique du SNP étant une transversion G/C associée à la tendreté post-mortem des muscles. L'invention concerne également des oligonucléotides utiles dans l'identification du génotype des bovins, qui se rapporte au site polymorphe du locus CAST. L'invention concerne ensuite des procédés et systèmes assistés par ordinateur, destinés à améliorer l'efficacité de la production de bétail possédant une viande tendre du point de vue commercial, au moyen de données multiples, et notamment le génotype des animaux qui se rapporte au SNP de CAST. Ces procédés de l'invention consistent à obtenir un échantillon génétique de chaque animal faisant partie du troupeau, à déterminer le génotype de chaque animal par rapport aux traits de qualités appropriés, définis par un groupe d'au moins deux polymorphismes d'un nucléotide simple (SNP), un SNP correspondant à un site entre 5 et 6 exons du locus CAST bovin, à regrouper les animaux ayant des génotypes similaires et éventuellement à placer les animaux dans des sous-groupes sur la base des phénotypes similaires.
