L'invention a pour objet des polymères solubles de glucose branchés ne contenant substantiellement pas de liaisons .beta. glucosidiques, caractérisés par le fait qu'ils présentent entre 2,5 et 10 % de liaisons glucosidiques .alpha.-1,6, une tendance très faible ou nulle à la rétrogradation en solution aqueuse, déterminée selon un test A, un Mp déterminé selon un test C à une valeur centrée du profil de distribution des masses moléculaires compris entre 10 4 et 10 8 daltons et une teneur en sucres réducteurs au plus égale à 9%.
