Nutritionally improved cultured dairy products such as yogurt products include a fine powdered calcium phosphate salt of reduced particle size having a mean diameter < 6µm in amounts sufficient to provide a total calcium content of 0.25 % to 0.75 %. A method for producing the calcium fortified yogurt is also provided wherein an fine powdered insoluble calcium salt is admixed with a milk blend prior to fermentation. The yogurt is prepared by conventional fermentation. Both stirred style and cup set style yogurt products can be prepared.

L'invention concerne des produits laitiers au contenu nutritif enrichi comme des produits yogourts contenant un sel de phosphate de calcium en fine poudre, de taille particulaire réduite possédant un diamètre moyen < 6µm, en quantités suffisantes pour apporter un contenu de calcium total compris entre 0,25 % et 0,75 %. L'invention concerne également un procédé de production de ce yogourt fortifié en calcium selon lequel un sel de calcium insoluble en fine poudre est adjoint à un mélange de lait avant fermentation. Le yogourt est préparé selon un procédé classique de fermentation. On peut préparer des produits yogourts de type fixe ou à mélanger.
