The invention relates to proteins with an enzymatic activity for converting .beta.-carotene into zeaxanthin or canthaxanthin into astaxanthin, to nucleic acids that code for these proteins, to nucleic acid constructs containing these nucleic acids, to genetically modified organisms in which the genetic modification causes or increases the gene expression of this nucleic acid compared with a wild type, and to methods for producing xanthophyll derivatives.
L'invention concerne des protéines possédant une activité enzymatique qui permet de transformer le .beta.-carotène en zéaxanthine ou la canthaxanthine en astaxanthine; des acides nucléiques codant pour lesdites protéines; des constructions d'acides nucléiques contenant lesdits acides nucléiques; des organismes génétiquement modifiés chez lesquels la modification génétique entraîne ou augmente l'expression génique par rapport au type sauvage; ainsi qu'une technique permettant de produire des dérivés de la xanthophylle.
