The invention relates to the industrial conversion of carbohydrates, alcohols, aldehydes or polyhydroxy compounds in aqueous phase. According to the invention a catalytic method is used for the conversion, using a metal catalyst consisting of polymer-stabilised nanoparticles. A catalyst of this type is not deactivated by the conversion reaction as long as the stabilising interaction between the polymer and the nanoparticles is maintained.
L'invention concerne la conversion industrielle d'hydrates de carbone, d'alcools, d'aldéhydes ou de composés polyhydroxy en phase aqueuse. Selon l'invention, la conversion catalytique est effectuée à l'aide d'un catalyseur métallique constitué de nanoparticules stabilisées par un polymère. La réaction de conversion ne désactive par un tel catalyseur tant que dure l'interaction stabilisante entre polymère et nanoparticules.
