A process for cheese production which comprises providing low-fat cheese milk, converting this cheese milk to low-fat fromage frais, and fatting this fromage frais by blending it with cream, characterised by (i) homogenizing at least part of the cheese milk before its conversion to fromage frais and/or (ii) using fatting cream which is enriched with membrane substance and homogenized.

Méthode pour la production de fromage à partir de lait allégé de crémerie, consistant à convertir ce lait de crémerie en fromage frais allégé, puis à enrichir en gras ce fromage frais à l'aide de crème; la méthode se caractérise par (i) une homogénéisation d'une partie au moins du lait de crémerie avant sa conversion en fromage frais et (ou) (ii) par l'emploi d'une crème ajoutant du gras qui est enrichi par une substance membraneuse et homogénéisée.
