A process for packaging fresh pork and the fresh pork package having enhanced visual appeal and shelf life stability, the process including the steps of introducing into the pork a treatment solution comprising a lactate buffer salt, a phosphate sequestrant and a diacetate flavor enhancement agent, and packaging the pork in a display unit. The display unit can comprise a thermoplastic tray covered by a transparent film and further packaging one or more display units in a film wrapped container. The atmosphere within the container can be maintained as a high oxygen atmosphere.
Divulgation d'un procédé de conditionnement de la viande porcine fraîche dans un emballage visuellement plus attrayant et se conservant plus longtemps à l'étalage. Le procédé comporte les étapes suivantes : introduire la viande porcine dans une solution de traitement comprenant du lactate comme sel tampon, du phosphate comme séquestrant et du diacétate comme rehausseur d'arôme, puis l'emballer dans une unité de vente au détail. Cette unité peut comprendre une barquette thermoplastique recouverte d'une pellicule transparente, plusieurs unités pouvant être regroupées dans un contenant enveloppé d'une pellicule. L'atmosphère dans le contenant peut être maintenue riche en oxygène.
